Expanding Coffee Processing Capacity at Cafés Finos Corquín

Coffee producers at Cafés Finos Corquín in the Copán region of Honduras are actively strengthening their processing infrastructure to support their growing operations. As production volumes steadily increased, the producers used their democratic voting process to allocate a portion of their Fair Trade Community Development Funds toward critical facility upgrades. They designed a multi-year project to expand warehouse space and construction for the early stages of coffee drying. This worker-led initiative directly benefits 547 producers by expanding storage capacity for coffee by-products and enhancing overall production capabilities. Through their established democratic model, the producers identified infrastructure bottlenecks that made managing higher volumes of coffee difficult. To solve this practical challenge, they approved the construction of new warehouse spaces and specialized pre-drying patios. These new patios allow freshly depulped coffee to shed its initial moisture before moving to solar or mechanical dryers. This essential step dramatically improves processing efficiency, lowers the risk of unwanted fermentation, and reduces energy use during mechanical drying. Ultimately, this careful early processing directly protects the premium quality of the final product. The producers are making steady progress on these facility improvements. As of August 2025, $65,700 USD has been spent on construction and facility improvements out of a total project budget of $113,400 USD. Implementation will continue through July 2026 as additional infrastructure is completed. These strategic improvements ensure Cafés Finos Corquín can seamlessly manage long-term operations and market growth. Expanded storage prevents overcrowding and protects raw materials destined for specialized markets that demand sustainable, certified products. By fortifying these vital early processing stages, the producers are building the robust capacity they need to handle current and future harvest volumes while maintaining strict quality, traceability, and efficiency for years to come.
